  • 4 ounces (113.4 g) dark chocolate,, roughly chopped, or about 3/4 cup semisweet chips
  • 1 1/2 cups (354.88 ml) heavy whipping cream, , cold, plus a little more for brushing the tops of the scones
  • 1/4 cup (85 g) seedless raspberry preserves
  • white sparkling sugar,, for garnish

Instructions

  1. Place the flour, sugar, baking powder, and salt in a large bowl and whisk to combine.
  2. Cut the butter into 1/2-inch cubes and add it to the dry ingredients.
  3. Work the butter in, using a pastry blender, until the mixture resembles coarse meal and the butter pieces are no larger than the size of a pea.
  4. Stir in the chocolate.
  5. Make a well in the center, and pour in the cream.
  6. Fold, until the dough just barely starts to come together. (Don’t overwork the dough or the scones could come out tough. Streaks of flour should still remain.)
