Are you ready for a dessert that defies expectations and delights every single taste bud? Prepare yourself for the Chocolate Chip Cookie Crack Pie – a masterful fusion that marries the comforting familiarity of your favorite chocolate chip cookie with the notorious, irresistible allure of the legendary crack pie. This isn’t just a dessert; it’s an experience, a symphony of sweet and salty, crunchy and gooey, all encapsulated within a single, utterly addictive slice. Perfect for celebrating national #chocchipcookieweek, Pi Day, or any occasion that calls for extraordinary indulgence, this pie promises to become a cherished staple in your baking repertoire.

The Undeniable Charm of the Chocolate Chip Cookie

Few desserts hold as much universal appeal and nostalgic power as the humble chocolate chip cookie. For many, it’s more than just a sweet treat; it’s a warm hug, a reminder of childhood, and a symbol of simple, unadulterated joy. The combination of warm, soft, buttery dough studded with molten pockets of dark chocolate is, in my humble opinion, the pinnacle of dessert perfection. There’s an inherent comfort in biting into a perfectly baked chocolate chip cookie – that delightful interplay between chewy centers and slightly crisp edges, the rich sweetness balanced by a hint of salt, and the luxurious melt of chocolate that coats your tongue.

Over the years, I’ve refined my own ultimate chocolate chip cookie recipe, aiming for that ideal balance. My preferred version boasts a wonderfully soft and chewy interior, with a gratifyingly toothsome texture around the edges. To add a wholesome touch without compromising flavor or texture, I often incorporate whole grains, which also contributes to a richer, more complex taste profile. And for a touch of whimsy that my children adore, we always press colorful, dark chocolate M&M’s into the tops. Forget the wimpy milk chocolate; for a truly indulgent experience, dark chocolate M&M’s are the only way to go in my chocolate chip cookies!

When Pi Day Meets Cookie Week: A Culinary Inspiration

As #chocchipcookieweek rolled around, I knew I wanted to create something truly special. But then I realized the magical alignment of the calendar: my designated posting day for cookie week also happened to coincide with another beloved foodie holiday – Pi Day (March 14th, or 3/14, for those who appreciate mathematical puns!). This serendipitous timing presented an exciting challenge. How could I honor both the iconic chocolate chip cookie and the concept of a pie in a single, show-stopping creation? The answer lay in a dessert that has captivated palates worldwide with its dangerously delicious reputation: the legendary Crack Pie.

Encountering the Infamous Crack Pie

My first encounter with the original Crack Pie was a memorable one. It happened late one Saturday night in New York City, after an exquisite multi-course dinner at the impeccable Hearth restaurant. Feeling pleasantly satiated, we stumbled upon the famed Momofuku Milk Bar, just a block away. This iconic bakery, founded by the innovative Christina Tosi, has achieved global recognition for its playful and unique creations. Among them, Crack Pie stands out as perhaps her most celebrated and intensely crave-worthy invention. The opportunity to taste this notorious dessert firsthand was simply too good to pass up.

Momofuku Milk Bar’s Crack Pie lives up to its name – it is, without a doubt, utterly addictive. Its foundation is a chewy, brown-sugary oatmeal cookie crust, providing a delightful textural contrast. The filling, a sticky-sweet custard, possesses a subtle yet crucial salty edge that elevates its flavor profile, preventing it from being cloyingly sweet. Its reputation for being a dessert you can’t stop eating is well-earned.

Initially, after my first bite, I thought it was almost too sweet, verging on tooth-achingly so. Yet, by the first light of dawn the next morning, an undeniable craving pulled me from my bed. I had to have more. The pie exerted a powerful, almost hypnotic pull, and I found myself devouring every last crumb, determined to savor it all before anyone else had a chance. That singular experience solidified my understanding of its legend and ignited a spark of inspiration.

Crafting the Chocolate Chip Cookie Crack Pie

With the essence of Crack Pie fresh in my memory, and my deep love for chocolate chip cookies as a guiding star, my mission for #chocchipcookieweek and Pi Day was clear: to create a sweet and salty custard pie that captured the dangerously delicious character of Crack Pie, but infused with all the beloved flavors of my family’s favorite chocolate chip cookie. This meant combining distinct textures and tastes – the chewiness of oats, the crunch of a crust, the rich creaminess of custard, and the unmistakable goodness of chocolate and nuts.

The journey to perfection involved a few attempts, as any good recipe development does. It was a process of careful adjustments, balancing sweetness and saltiness, and refining textures. But finally, I believe I nailed it.

The feedback was immediate and enthusiastic. My husband and I both agreed without hesitation: this is quite possibly the BEST dessert I have ever made. And considering the sheer volume of baked goods that come out of my kitchen, that is truly saying something! It’s a testament to the powerful combination of flavors and textures in this unique pie.

Why This Chocolate Chip Cookie Crack Pie is a Must-Try

This Chocolate Chip Cookie Crack Pie is a marvel of contrasts and harmonies. The rustic, satisfying chewiness of oats, which traditionally feature in the original Crack Pie’s crust, are cleverly integrated directly into our rich, custardy filling. This creates an unexpected and delightful texture that keeps every bite interesting. The crust itself is a simple yet supremely effective graham cracker crust. While store-bought options are always available for convenience, I highly recommend making this less-sweet homemade version. It literally takes mere minutes to prepare and its sandy crunch and slightly savory undertones truly elevate the entire pie, providing the perfect counterpoint to the indulgent filling.

And speaking of the filling: it’s a glorious blend of deeply chocolatey and subtly nutty flavors, complemented by that signature chew from the oats. A delicate buttermilk tang cuts through the richness, adding a bright, complex note that prevents the pie from being one-dimensional. The texture of this custard pie is exquisitely rich and creamy, promising a melt-in-your-mouth sensation with every forkful. It’s a dessert that truly hits all the right notes – sweet, salty, rich, and comforting, with an addictive quality that makes you reach for “just one more slice.”

Ingredients

For the Crust:

  • 1 cup (84 g) graham cracker crumbs
  • 4 tablespoons (59.15 g) unsalted butter, , melted
  • 4 teaspoons granulated sugar

For the Filling

  • 1/3 cup (73.33 g) light brown sugar, (loosely packed)
  • 2 tablespoons granulated sugar
  • 2 tablespoons dry milk powder
  • 1/3 cup (78.86 ml) buttermilk
  • 6 tablespoons (88.72 g) unsalted butter, , melted
  • 2 egg yolks, (large)
  • 1 egg, (large)
  • 2 teaspoons vanilla extract
  • 1/3 cup (41.67 g) all-purpose flour
  • 1/3 cup (27 g) old fashioned oats
  • 1/4 cup (30 g) whole wheat flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 cup (180 g) chocolate chips,, plus extra for garnish
  • 1/2 cup (54.5 g) pecan pieces
  • 3 tablespoons dark chocolate m&m’s

Instructions

Make the Crust:

  • Preheat the oven to 350 degrees F (175 C).
  • Combine the graham cracker crumbs, melted butter, and granulated sugar in a medium bowl. Mix thoroughly with a fork until the crumbs are evenly moistened.
  • Firmly press the mixture into the bottom and up the sides of a 9-inch diameter pie dish. Bake for 10 minutes, then remove from oven and let cool slightly while you prepare the filling.

Make the Filling:

  • In a large bowl, whisk together the brown sugar, granulated sugar, and dry milk powder until well combined and no lumps remain.
  • Pour in the buttermilk and melted butter, and stir until fully incorporated. Next, add the egg yolks, whole egg, and vanilla extract, stirring until smooth.
  • Gradually add the all-purpose flour, old fashioned oats, whole wheat flour, cornstarch, baking soda, and kosher salt to the wet mixture. Stir gently until all the dry ingredients are just combined and no streaks of flour remain. Do not overmix.
  • Gently fold in the chocolate chips and pecan pieces until they are evenly distributed throughout the filling. Carefully pour the mixture into the prepared and slightly cooled graham cracker pie shell.
  • Bake for 25 minutes, or until the edges are golden brown and the center is set but still slightly wobbly when gently shaken.
  • Once out of the oven, immediately sprinkle the top of the hot pie with additional chocolate chips and dark chocolate M&M’s for extra visual appeal and flavor.
  • Allow the pie to cool completely at room temperature before attempting to cut and serve. For perfectly clean slices, similar to what you see in the photos, I highly recommend chilling the pie in the refrigerator for at least 2-3 hours, or overnight, before slicing.
