Pumpkin Beer Soft Pretzels
Like pumpkin beer? Then you’ll LOVE these homemade soft pretzels, with real pumpkin and pumpkin beer right in the dough! Brushed with melted butter and dusted with pumpkin spice sugar, they’re a fun and delicious seasonal fall treat!

Ingredients
For the Pumpkin Beer Soft Pretzel Dough
- 1 cup (236 ml) pumpkin beer
- 1/2 cup (122.5 g) pure pumpkin puree
- 1/4 cup (55 g) light brown sugar
- 1/4 ounce (7.09 g) dry active yeast (1 packet)
- 2 tablespoons vegetable oil
- 1/2 teaspoon (0.5 teaspoon) kosher salt
- 4 cup (500 g) all-purpose flour (you may need as much as 4 1/4 cups)
Additionally
- Large pot of boiling water
- About 1/4 cup baking soda
- About 2 tablespoons melted butter
- 1/3 cup (66.67 g) granulated sugar
- 1 tablespoon pumpkin pie spice
- 1 teaspoon kosher salt
Instructions
- Place the beer, pumpkin puree, and brown sugar in a large bowl. Heat in the microwave in 15-second increments until very warm (but not hot).
- Stir the mixture together, then sprinkle the yeast on top. Set aside for 5 minutes, or until the yeast has fully dissolved and become foamy.
- Add the vegetable oil and 1/2 teaspoon kosher salt to the bowl. Stir in 4 cups of all-purpose flour. Mix until the dough forms a cohesive ball and pulls away cleanly from the sides of the bowl. (If the dough is too sticky, gradually add up to 1/4 cup of additional flour until it reaches the right consistency.)
- Cover the bowl and allow the dough to rise in a warm place for 45 minutes, or until it has noticeably increased in size.
- While the dough is rising, line baking sheets with parchment paper and lightly mist with non-stick spray.
- After the first rise, divide the dough into 12 equal portions. Roll each portion into a rope approximately 18 inches long.
- Twist each rope into the classic pretzel shape and place them on the prepared baking pans.
- Allow the shaped pretzels to rise again for 25 minutes.
- While the pretzels are completing their second rise, fill a large pot with water and bring it to a low boil.
- Carefully add about 1/4 cup baking soda to the boiling water (it will foam up). Boil the pretzels for about 30 seconds on each side. Remove them from the water and let them drain on clean towels.
- Preheat your oven to 450 degrees F (232 degrees C). Transfer the boiled pretzels to the parchment-lined baking sheets if they are not already there.
- Bake for 10-12 minutes, or until the pretzels are deep golden brown and puffy.
- Cool the pretzels completely on a wire rack.
- In a small bowl, stir together the 1/3 cup granulated sugar, 1 tablespoon pumpkin pie spice, and 1 teaspoon kosher salt to create the pumpkin spice sugar coating.
- Brush the cooled pretzels lightly with melted butter, then roll or sprinkle them generously with the Pumpkin Spice Sugar mixture until evenly coated. Serve immediately and enjoy!
