Baking with Love: Creating Moments of Sweet Indulgence
There’s something truly special about starting a week with the aroma of freshly baked cookies filling the kitchen. It’s a wonderful way to carry forward the warmth and joy of a weekend spent with loved ones. Imagine those precious moments: a bright Sunday morning, the family gathered, perhaps a simple brunch with a celebratory mimosa or two, and the sheer delight of everyone, even the most energetic little ones, pausing for a moment of togetherness. Capturing those fleeting instances, whether through photographs or shared laughter, is what makes life truly sweet.
This week, I’m particularly excited to share a recipe that embodies that very spirit of joy and indulgence. It’s a recipe born from a desire to create something truly extraordinary, something that not only satisfies an intense chocolate craving but also introduces a wonderfully unique ingredient into your baking repertoire. Get ready to discover your new favorite cookie!

The Star Ingredient: Soom Chocolate Sesame Butter
The secret to these sensational cookies lies in a truly remarkable ingredient: Soom chocolate sesame butter. If you haven’t yet had the pleasure of discovering this culinary gem, prepare to have your world (or at least your pantry!) transformed. Soom is not just another spread; it’s a delightful fusion that brings together the rich complexity of chocolate with the deep, earthy, and slightly nutty flavor of sesame.

What makes Soom so exceptional? For starters, it’s a powerhouse of good-for-you qualities: naturally gluten-free, vegan, certified kosher, and non-GMO. It’s crafted from the highest quality Ethiopian white Humera sesame seeds, renowned for their superior flavor. Beyond its impressive dietary credentials, Soom chocolate sesame butter stands out for its nutritional profile. Unlike many other chocolate spreads laden with excessive sugar, Soom offers significantly less sugar (only 7 grams per serving) while providing a boost of 4 grams of protein and 15% of your daily iron intake. It’s a choice you can feel good about indulging in.
A Story of Sisterhood and Quality
Adding to its appeal, Soom is a local Philadelphia company, founded by three visionary sisters. Their commitment to quality and passion for healthy, delicious food shines through in every jar. When I first received a sample from Shelby, Jackie, and Amy, I was instantly captivated. This spread is truly something special. It shares a certain decadent creaminess with popular spreads like Nutella, but with a nuanced difference that I find incredibly appealing. It’s less sweet, which allows the profound, nutty essence of the sesame to truly shine. While it tastes delightfully nutty, it’s important to clarify that it contains absolutely no peanuts or tree nuts. This makes it an ideal, flavorful substitute for families managing nut allergies, allowing everyone to enjoy rich, satisfying treats without worry.
The flavor profile of Soom chocolate sesame butter is distinct. Imagine the subtle, toasted depth that sesame oil brings to a savory dish, but transformed into a sweet, chocolatey, spreadable delight. It’s sesame, through and through, yet with an intriguing undertone that hints at something akin to a rich peanut butter, despite being entirely nut-free. This complexity is what elevates it from a simple spread to a truly gourmet ingredient, perfect for baking, spreading on toast, or enjoying straight from the spoon!
Crafting the Ultimate Chocolate Sesame Butter Cookies
With such an incredible ingredient at hand, my mind immediately turned to cookies. But not just any cookies – I envisioned a creation that would fully showcase the unique depth of Soom chocolate sesame butter. The result is these sensational chocolate sesame butter sandwich cookies, a multi-layered masterpiece designed for the true chocolate and sesame aficionado.

These aren’t just cookies; they’re an experience. We start with incredibly soft, chewy chocolate cookies, infused with the distinctive flavor of Soom chocolate sesame butter. Then, these delectable rounds are paired and generously filled with a velvety, homemade chocolate sesame buttercream. The journey doesn’t end there: each sandwich cookie is then dipped into luscious dark chocolate, creating a delightful shell that adds another layer of texture and intense cocoa flavor. Finally, a delicate sprinkle of white sesame seeds provides a beautiful visual contrast and a hint of extra sesame aroma.

Honestly, these cookies have an almost hypnotic quality. They possess that perfect balance of sweetness and rich, earthy notes that makes them utterly irresistible. I’ve found myself repeatedly reaching for “just one more.” They truly disappear faster than you can say “chocolate sesame bliss.” It’s a delightful problem to have, and one that invariably leads to ordering more Soom chocolate sesame butter!

Tips for Baking Perfect Chocolate Sesame Butter Cookies
Creating these delightful chocolate sesame butter sandwich cookies is a rewarding experience, and with a few simple tips, you can ensure your batch turns out perfectly every time. Precision in baking often makes all the difference, especially when working with unique ingredients like chocolate sesame butter.
Cookie Dough Mastery
- Butter Temperature: Ensure both your unsalted butter and Soom chocolate sesame butter are truly softened. This allows them to cream together beautifully with the brown sugar, creating a light and airy base for your cookies.
- Measuring Dry Ingredients: For the softest cookies, always measure your flour, cornstarch, and cocoa powder accurately. Too much flour can lead to dry, crumbly cookies. I recommend using a kitchen scale for precision, or the “spoon and level” method if using measuring cups.
- Cornstarch’s Role: The addition of cornstarch is key to the tender texture of these cookies. It helps to soften the flour, preventing the cookies from becoming tough and giving them that desirable melt-in-your-mouth quality.
- Rolling Uniformly: Rolling the dough to a consistent ¼-inch thickness is crucial for even baking. If you have them, rolling pin rings are an excellent tool to achieve this. Uniform thickness ensures that all your cookies bake at the same rate, preventing some from being overdone while others are undercooked.
- Chilling the Dough (Optional but Recommended): While not explicitly stated in the recipe steps, a brief chill (15-30 minutes) for the rolled-out dough can make it easier to cut and transfer the cookies, especially in warmer kitchens. This also helps the cookies maintain their shape better during baking.
- Baking Time: Keep a close eye on your cookies while they bake. Eight minutes is a good guideline, but oven temperatures can vary. You’re looking for cookies that are set around the edges but still appear slightly soft in the center. They will continue to firm up as they cool.
Achieving Creamy Buttercream Perfection
- Softened Butter (Again!): Just like for the cookies, softened butter is essential for a smooth and lump-free buttercream.
- Sift Your Powdered Sugar: Sifting the powdered sugar before adding it to the butter and chocolate sesame butter mixture will prevent any gritty texture in your buttercream, ensuring it’s beautifully smooth and pipeable.
- Gradual Addition: Add the powdered sugar gradually, mixing on low speed, to avoid a cloud of sugar dust in your kitchen! Once incorporated, beat on medium-high until the buttercream is light and fluffy.
The Art of Chocolate Dipping
- Melting Chocolate: Use high-quality dark chocolate melting wafers for the best results. Follow the package directions for melting, whether in a microwave or a double boiler. Proper melting ensures a smooth, glossy coating. Avoid overheating, which can cause the chocolate to seize.
- Cooling is Key: Ensure your sandwich cookies are completely cooled before dipping them in chocolate. If the cookies are warm, the chocolate will melt rather than set, creating a mess.
- Garnish Immediately: Sprinkle the sesame seeds onto the wet chocolate immediately after dipping. This ensures they adhere properly before the chocolate sets.
Serving and Storage Suggestions
These chocolate sesame butter sandwich cookies are best enjoyed fresh, but they also store beautifully. Store them in an airtight container at room temperature for up to 3-4 days, or in the refrigerator for up to a week. For longer storage, they can be frozen for up to one month. Simply thaw at room temperature before serving.
They make an exquisite dessert for special occasions, a delightful treat for an afternoon tea, or a comforting snack any time you need a little indulgence. Pair them with a cold glass of milk, a warm cup of coffee, or even a scoop of vanilla bean ice cream for an extra-special dessert experience.
