  • 1/4 cup (50 g) granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon (0.25 teaspoon) kosher salt
  • 4 ounces (113.4 ml) salted caramel sauce,, plus extra for garnish

For the oatmeal bars

  • 2 cups (250 g) all-purpose flour
  • 2 cups (162 g) old-fashioned oats
  • 1 1/4 cups (275 g) light brown sugar,, lightly packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon (0.5 teaspoon) kosher salt
  • 1 1/4 cups (283.75 g) unsalted butter, (2 1/2 sticks), cold

Instructions

 

To make the apple filling:

  • Melt the butter in a large skillet, over medium heat.  
  • Add the apples, sugar, cinnamon, and salt.  Cook, stirring occasionally, until the apples have softened slightly (about 5 to 10 minutes). They should be tender but still hold their shape. Remove from heat and allow to cool completely before proceeding.

To make the oatmeal bars:

  • Preheat the oven to 350 degrees F (175 degrees C).  
  • Lightly mist a 9-inch x 9-inch square baking pan with non-stick spray, and line it with parchment paper, allowing the excess to drape over the sides of the pan. This will create “handles” to easily lift the bars later.
  • In a large mixing bowl, combine the flour, old-fashioned oats, light brown sugar, baking soda, and salt. Stir these dry ingredients thoroughly to ensure they are well combined.
  • Cut the cold unsalted butter into half-inch pieces. Add the butter pieces to the dry ingredients and use a pastry blender or your clean fingertips to cut the butter into the mixture until it resembles a coarse, crumbly streusel. Do not overmix; the texture should be very crumbly.
