Ingredients

  • 1/3 cup (78.86 ml) amaretto liqueur
  • 1/2 cup (69 g) tart dried cherries
  • 14 ounces (396.89 g) dark chocolate, (70% cacao), broken into small pieces
  • 1 cup (227 g) unsalted butter, (2 sticks)
  • 6 large eggs, separated
  • 1 cup (200 g) granulated sugar
  • 1 scant cup (112 g) almond meal
  • 1/2 cup (62.5 g) all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt
  • 1 cup (86 g) cocoa dusted almonds, for garnish
  • powdered sugar, for garnish

Instructions

  1. Combine the amaretto and dried cherries and let them soak for 30 minutes to plump up and absorb the rich flavor.
  2. Preheat your oven to 350 degrees F (175 C). Lightly mist a 9-inch cake pan with non-stick spray, then line the bottom with a circle of parchment paper for easy release.
  3. In a large, heatproof bowl, combine the dark chocolate pieces and unsalted butter. Melt them gently over a double boiler or in the microwave in short bursts, stirring frequently until the mixture is completely smooth and glossy.
  4. In a separate bowl, using an electric mixer, beat the egg yolks and granulated sugar together on medium-high speed until the mixture becomes pale in color and thick in consistency. Gently fold in the amaretto-soaked cherries (and any remaining amaretto liqueur), almond meal, all-purpose flour, vanilla extract, almond extract, salt, and the melted chocolate mixture until just combined.
  5. In a clean, separate bowl, whip the egg whites until they form firm, glossy stiff peaks. Be careful not to overmix.
  6. Gently fold the whipped egg whites into the chocolate mixture in two or three additions, being careful not to deflate the air. Transfer the luxurious batter into your prepared cake pan.
  7. Bake for 40-45 minutes, or until the edges of the torte are set and a tester inserted into the center comes out with moist crumbs (it will still be quite gooey in the center, which is desired). Allow the torte to cool in the pan for 30 minutes before inverting it onto a wire rack to cool completely.
  8. Just before serving, generously top with the cocoa-dusted almonds and a dusting of powdered sugar. Slice and serve this magnificent torte.
