  • 1/2 cup (110 g) light brown sugar,, lightly packed
  • 1 large egg
  • 1 tablespoon finely grated ginger
  • 1/2 teaspoon (0.5 teaspoon) vanilla bean paste, (extract may be substituted)
  • 1/2 cup (62.5 g) all-purpose flour
  • 1/2 teaspoon (0.5 teaspoon) baking powder
  • 1/2 teaspoon (0.5 teaspoon) kosher salt

For the Butter Rum Sauce

  • 1/4 cup (50 g) granulated sugar
  • 1/3 cup (83.33 ml) water
  • 1/4 cup (59.5 ml) heavy cream
  • 1 tablespoon unsalted butter
  • 1/8 teaspoon (0.13 teaspoon) kosher salt
  • 1 tablespoon dark rum,, optional
