It’s incredible how quickly time flies! It feels like just yesterday we embarked on our culinary journey with the Mystery Dish group, and here we are, at the end of October, celebrating another month of creative cooking. Being part of this group has been an absolute joy, fostering amazing friendships and inspiring delicious new recipes. If you’re new to the concept, Mystery Dish is a fantastic blogging challenge where a group of us receive a concise list of ingredients, and our mission is to craft our own unique recipe, incorporating as many of those ingredients as possible. It’s a wonderful exercise in creativity and a testament to the diverse interpretations of shared components.

Last month, for instance, our ingredient list included apples, cinnamon, maple syrup, and bacon. I transformed these into delectable Apple Cinnamon Pancake Cupcakes with Maple Buttercream and Crispy Bacon Sprinkles, a sweet and savory treat that was a huge hit.

This month, the October Mystery Dish ingredients offered an exciting, albeit slightly daunting, autumnal theme:
- Sweet Potato
- Kale
- Squash (any kind, including pumpkin)
- Nutmeg

- Candy Corn
Initially, I admit, the list presented a delightful puzzle. With such a diverse array of flavors, the possibilities were endless, but also a little overwhelming! After much consideration, I decided to lean into the savory side, embracing the warm, comforting notes that these ingredients could offer, while still allowing for a touch of sweetness.
Crafting the Perfect Sweet and Savory Harmony

The inspiration for this Croque Madame creation truly began at home, with my wonderful foodie husband. Living with someone who constantly thinks about food has its delicious perks! Despite being a proud Philadelphian, his heart truly belongs to Southern comfort and soul food. He adores a classic fluffy buttermilk biscuit paired with salty country ham. When he saw this month’s Mystery Dish list, his eyes lit up, and he immediately envisioned sweet potato biscuits dancing in his head!
Taking his vision as a starting point, I adapted the classic Southern biscuit sandwich. Instead of country ham, I opted for thinly sliced smoked turkey, which provides a wonderful depth and savory balance. To complete this harmonious trio of flavors, I added a vibrant, quick cranberry compote, bringing a burst of tartness that cuts through the richness and complements the smoky turkey beautifully. The result was a sandwich that instantly brought a smile to my Philadelphia soul-foodie’s face.

He was perfectly content with this simple, pure rendition: a sweet potato biscuit, smoked turkey, and cranberry. But I, as is often my nature, couldn’t resist gilding the lily a little. I believe in taking good food and making it extraordinary, especially when the opportunity for a truly stunning presentation arises. And thus, the Croque Madame transformation began!

To elevate this delightful sandwich into a full-fledged Croque Madame, I introduced two key elements: a luscious aged cheddar Mornay sauce and a perfectly fried egg. The Mornay sauce, a classic French béchamel infused with cheese, provides an incredibly creamy and savory layer that beautifully binds all the components. Using aged cheddar instead of a more traditional Gruyère adds a sharp, tangy “American twist” to this French-inspired dish. And the fried egg? It’s not just for aesthetics! That rich, runny yolk cascades over the sandwich, adding another layer of luxurious moisture and richness, transforming it from a mere sandwich into a knife-and-fork meal that is truly soul-satisfying.

The secret lies in keeping your ingredients, especially the butter, as cold as possible, and most importantly, in avoiding overworking the dough. Ingredients
For the Cranberry Compote:
- 12 ounces (340.2 g) fresh cranberries
- 1 cup (200 g) granulated sugar
- 1 cup (236.59 ml) water
For the Cheese Sauce:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup (236.59 ml) milk, (I used 1%)
- 1/2 cup (56.5 g) shredded aged cheddar cheese
- 1/4 teaspoon dry mustard powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground nutmeg
Additionally:
- 8 (1 batch) sweet potato biscuits
- 1 pound (453.59 g) of smoked turkey meat, sliced thinly
- 8 eggs, fried
Instructions
Make the Cranberry Compote:

Place the cranberries, water, and sugar in a medium pot and bring to boil.

Lower the heat and simmer for 10 minutes, until cranberries burst and sauce thickens slightly.

Cool completely before using. The compote will thicken further as it cools.
Make the Cheese Sauce:

In a small pot, melt the butter over medium-low heat. Once melted, sprinkle in the all-purpose flour and whisk continuously to combine, forming a roux. Allow it to cook for about a minute, stirring, to cook out the raw flour taste.

Gradually whisk in the milk, ensuring no lumps form. Bring the mixture to a gentle simmer, stirring frequently, until the sauce thickens to your desired consistency.

Remove the pot from the heat. Stir in the shredded aged cheddar cheese, a little at a time, allowing each addition to melt smoothly into the sauce before adding more. This ensures a creamy, lump-free cheese sauce.

Finally, stir in the dry mustard powder, kosher salt, and freshly ground nutmeg. Taste and adjust seasonings as needed. Keep warm until ready to assemble.
Assemble the Sandwiches:

Carefully split each sweet potato biscuit in half horizontally. Spread a generous layer of the cooled cranberry compote on the bottom half of each biscuit.

Layer a few slices of the thinly sliced smoked turkey meat over the cranberry compote. Place the top half of the biscuit to create a sandwich.

To serve, spoon a little of the warm cheese sauce onto your serving plate. Carefully place a biscuit sandwich on top of the sauce.

**You will have extra cranberry sauce left over, which is fantastic on toast, yogurt, or with other turkey dishes.
***If you do not have buttermilk on hand, you can easily make a substitute! Add 1 tablespoon of white vinegar or lemon juice to 1 cup of regular milk, stir, and allow it to stand for 5 minutes. This creates a homemade buttermilk substitute perfect for baking.
