    English breakfast teabags
  • 6 tablespoons
    (88.72 g)
    granulated sugar,, divided, plus a little more for coating the ramekins

    all-purpose flour
  • 1 tablespoon

    unsalted butter, melted

Instructions

 

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place 1 cup of the milk and 2 of the teabags in a small pot and bring to a gentle simmer.
  • Remove from heat and allow the tea to infuse the milk for 15 minutes. This step is crucial for developing the rich tea flavor.
  • Remove and discard the teabags, gently squeezing out any excess liquid. Set the “tea milk” aside to cool slightly.
  • Lightly spray six 6-ounce ramekins with non-stick spray. Sprinkle the insides with granulated sugar, rotating to coat evenly, then tap out any excess sugar. This creates a slightly crispy, sweet exterior.
  • In a medium-sized mixing bowl, combine 2 tablespoons of the granulated sugar with the all-purpose flour. Whisk in the remaining ¼ cup of milk and the melted butter until smooth.
  • Whisk the egg yolks into the slightly cooled “tea milk.” Then, slowly whisk this mixture into the flour mixture until completely smooth and free of lumps. Set aside.
  • In a separate, small bowl, whip the egg whites on high speed until they form stiff, glossy peaks. This will give the pudding cakes their characteristic fluffiness.
  • Gradually whip in the remaining 4 tablespoons of granulated sugar into the egg whites until the mixture is stiff and glossy.
  • Gently fold about a cup of the whipped egg whites into the tea-infused batter to lighten it. Then, pour this lightened batter back into the bowl with the remaining egg whites and carefully fold until just combined. Be careful not to deflate the egg whites.
  • Divide the batter equally among the prepared ramekins.
