Ingredients

For the Hazelnut Macaron Shells:

  • 120 grams hazelnut flour
  • 200 grams powdered sugar
  • 100 grams egg whites
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon kosher salt
  • 30 grams granulated sugar

For the Pumpkin Maple Cream Cheese Filling:

  • 4 ounces cream cheese (half a brick), softened
  • 3 tablespoons pure pumpkin puree
  • 3 tablespoons pure maple syrup
  • 1/8 teaspoon ground cinnamon
  • 1 drop tulip red gel paste food coloring (optional, for color)
  • 1 drop ivory gel paste food coloring (optional, for color)
  • 1 drop yellow gel paste food coloring (optional, for color)
  • 1/4 cup heavy cream, cold

Instructions

To Make the Hazelnut Macaron Shells:

  1. Measure the hazelnut flour and powdered sugar into a food processor. Pulse until it forms a fine powder, then sift the mixture. Re-process any larger bits that remain, and sift again. Discard any stubborn large pieces.
  2. In a clean mixing bowl, whip the egg whites, cream of tartar, and salt on medium speed until the mixture becomes frothy.
  3. Gradually add the granulated sugar, about a teaspoon at a time, while continuing to whip. Once all the sugar is incorporated, increase the speed to high and whip until the meringue is glossy and holds stiff peaks.
  4. Gently fold the sifted hazelnut flour mixture into the meringue. Continue folding until the batter achieves a lava-like consistency, falling from the spoon in one long, continuous ribbon (this is known as the “macaronage” stage).
  5. Transfer the batter to a piping bag fitted with a large round tip. Pipe uniform rounds, approximately 1 inch in diameter, onto parchment-lined baking sheets.
  6. Firmly tap the baking sheets on the counter several times to release any trapped air bubbles. Allow the piped macarons to dry at room temperature for 30-45 minutes, or until a light touch no longer feels sticky. This drying process is crucial for developing their characteristic “feet.”
  7. Preheat your oven to 325 degrees F (160 degrees C). Bake the macarons for 15-16 minutes.
  8. Once baked, allow the macarons to cool completely on the baking sheet before gently peeling them off. Once cooled, they are ready to be filled.

To Make the Pumpkin Maple Cream Cheese Filling:

  1. In a large mixing bowl, combine the softened cream cheese, pumpkin puree, and maple syrup. Whip these ingredients together until the mixture is light and fluffy.
  2. Add the ground cinnamon and a drop or two of food coloring (if using, to achieve a desired autumnal hue). Mix until the color is evenly distributed.
  3. Slowly drizzle in the cold heavy cream while the mixer is on medium speed.
  4. Once all the cream has been incorporated, increase the mixer speed to high and whip until stiff peaks form. This usually takes about 30-45 seconds. Be careful not to over-whip.

Notes

Be careful not to over-whip the filling or it could become runny and lose its desired consistency. The ideal texture is firm enough to hold its shape but still creamy.
