The Power of Wholesome Ingredients
At the heart of these irresistible mini bundt cakes lies a carefully chosen blend of ingredients designed to elevate both flavor and nutritional value. Let’s explore the superfood stars that make these cakes a healthier choice:
Embracing Einkorn Flour: An Ancient Grain Revival
One of the key ingredients that sets this recipe apart is einkorn flour. While not strictly gluten-free, einkorn is an ancient grain that has garnered significant attention for its distinct properties. Unlike modern wheat varieties that have undergone extensive genetic modification, einkorn has retained its original genetic structure, making it much easier for many people with gluten sensitivities to digest. Its unique gluten structure is often better tolerated than that found in conventional wheat, offering a gentle alternative for those seeking a less inflammatory option.
Beyond its digestibility, einkorn flour imparts a wonderfully subtle, slightly nutty flavor to baked goods. In this recipe, it contributes to a tender crumb without noticeably altering the delicate almond taste or the cake’s overall texture. If einkorn isn’t readily available, fear not! You can easily substitute it with an equal measure of all-purpose flour without compromising the success of these delicious mini bundts. However, if you have the opportunity, we highly recommend experiencing the unique qualities of einkorn.
Nutrient-Rich Additions: Almonds, Coconut Oil, and Greek Yogurt
Our mini bundt cakes are truly bursting with nutrient density, thanks to several other star ingredients:
- Almonds: Not only do almonds lend their signature delicate flavor and aroma to these cakes, but they also provide a powerful punch of healthy fats, protein, and dietary fiber. Almond flour, specifically, adds a beautiful richness and moistness to the cake batter.
- Coconut Oil: Used in its solid form, coconut oil serves as a fantastic healthier alternative to traditional butter. It’s renowned for its medium-chain triglycerides (MCTs), which are known for their potential energy-boosting benefits. It also contributes to the cake’s tender texture and a very subtle hint of tropical aroma that complements the almond beautifully.
- Greek Yogurt: This creamy ingredient is a true baking hero. Greek yogurt not only adds incredible moisture to the cake, resulting in a wonderfully soft and tender crumb, but it also boosts the protein content. Its slight tanginess beautifully balances the sweetness of the cakes and glaze, adding a depth of flavor that’s simply irresistible.
The Magic of Matcha Green Tea Glaze
The vibrant green glaze isn’t just for show; it’s a crucial component that brings an earthy, slightly bitter counterpoint to the sweet almond cakes. Matcha powder, a finely ground green tea, is celebrated for its incredibly high antioxidant content. This means every drizzle of that gorgeous green glaze not only adds a burst of unique flavor but also a dose of powerful health benefits, making these cakes truly a feel-good treat.

Baking with Confidence: The PAM Advantage
When it comes to baking, especially with intricate molds like mini bundt pans, ensuring your creations release perfectly is paramount. Nobody wants to see their hard work and precious ingredients stick to the pan! That’s where a reliable non-stick spray like PAM Baking truly shines. It’s often the unsung hero in the kitchen, providing that crucial peace of mind.
Traditional methods of greasing and flouring pans, while effective, can sometimes be messy and lead to residue buildup on your cookware over time. PAM Baking, however, is specifically formulated with real flour to coat every nook and cranny of your bakeware, ensuring a clean release every single time. This is especially vital for mini bundt pans with their numerous ridges and delicate designs. The thought of those beautiful cakes breaking apart as you try to invert them is enough to deter any baker, but with PAM Baking, you can confidently turn out perfectly shaped treats with ease.
Beyond the flawless release, PAM Baking leaves significantly less residue – up to 99% less than leading cooking sprays (excluding olive oil), based on rigorous testing. This means not only do your cakes come out pristine, but cleanup is also a breeze. Imagine saving precious time during both prep and washing up, allowing you to focus more on the joy of baking and less on the chores. PAM is truly your ally in the kitchen, helping you achieve professional-looking results with minimal fuss.

For the Matcha Green Tea Glaze
- 3/4 cup (90 g) powdered sugar
- 1/2 teaspoon (0.5 teaspoon) matcha powder
- 3 tablespoons Greek yogurt
- nonpareil sprinkles,, for garnish (optional)
Instructions
Make the Mini Bundt Cakes:
-
Preheat the oven to 350 degrees F and generously spray a mini bundt pan with PAM Baking spray.
-
Place the einkorn flour, almond flour, baking powder, baking soda, and salt in a large mixing bowl and stir thoroughly to combine.
-
Add the solid coconut oil to the dry ingredients and mix on low speed until the mixture achieves a texture resembling damp sand.
-
Pour in the honey and stir until well combined, ensuring it’s evenly distributed throughout the mixture.
-
Incorporate the egg, Greek yogurt, milk, and both vanilla and almond extracts, stirring until just combined.
-
Increase the mixer speed to medium and beat the batter for approximately 30 seconds. This step is crucial for aerating the batter and developing the cake’s delicate structure, ensuring a light and fluffy result.
-
Carefully transfer the prepared batter into the greased mini bundt pan, filling each mold evenly. Bake for 20 minutes, or until a bamboo skewer inserted into the thickest part of a cake comes out clean, or with just one or two moist crumbs attached.
-
Allow the cakes to cool in the pan for 10 minutes before carefully removing them. Transfer to a wire rack and cool completely. Once cooled, you can either dust them with powdered sugar or prepare to drizzle with the matcha glaze.
Make the Matcha Green Tea Glaze:
-
In a small bowl, combine the powdered sugar and matcha powder. Stir well until there are no lumps and the mixture is uniformly green.
-
Add the Greek yogurt to the sugar and matcha mixture. Stir until a smooth, thick glaze forms. If the glaze is too thick, add a tiny bit more milk (1/4 teaspoon at a time) until it reaches a drizzle-able consistency. Drizzle the vibrant glaze generously over the completely cooled cakes.
-
For an extra touch of festivity and visual appeal, garnish with nonpareil sprinkles (optional).
