  • 1/2 teaspoon (3 g) kosher salt, plus more for sprinkling
  • 1/2 cup (118 g) beer (water can be substituted)
  • 8 hot dogs (your preferred variety)
  • 3 quarts (2,839.06 g) water (for boiling)
  • 1/3 cup (40 g) baking soda
  • Egg wash (1 large egg beaten with a teaspoon of water)

Instructions

  1. Place the brown sugar in a large bowl and pour the lukewarm water on top. Stir gently until the sugar dissolves.
  2. Sprinkle the yeast over the water’s surface and let it dissolve (approx. 5 minutes), until it becomes visibly foamy.
  3. Stir in the flour, salt, and beer (or additional water) until a stiff dough forms and cleanly pulls away from the sides of the bowl.
  4. Knead the dough vigorously on a lightly floured surface for 10 to 15 minutes until it is silky and elastic, passing the windowpane test.
  5. Lightly cover the dough with plastic wrap and allow it to rest in a warm place for 90 minutes, or until it has doubled in size.
  6. Lightly flour your hands and work surface. Gently punch down the dough, knead a few times, then divide it into 8 equal portions. Keep unused portions lightly covered.
  7. Working with one portion of dough, roll it into a long rope (about 20 inches). Spiral the rope around a hot dog, tucking the ends securely underneath.
  8. Place each wrapped hot dog on individual rectangles of parchment paper on a baking sheet. Lightly mist plastic wrap with non-stick spray and gently cover them. Let them rise for an additional 30 minutes in a warm spot.
  9. Preheat your oven to 450°F (232°C). Bring 3 quarts of water to a rolling boil in a large pot.
  10. Carefully add the baking soda to the boiling water (it will foam up significantly!). Gently pick up each pretzel dog by its parchment paper, flip it into the hot water, and peel away the parchment paper once submerged.
  11. Boil each pretzel dog for 1 to 2 minutes per side. Use a slotted spoon or spider skimmer to gently lift them out, drain well, and place them on a clean parchment-lined baking sheet, spaced apart.
  12. Brush each pretzel dog generously with the prepared egg wash and sprinkle immediately with coarse salt.
  13. Bake for approximately 16 to 24 minutes, or until deeply golden brown and beautifully puffed. Serve warm with your favorite dips and enjoy!
