Place over medium-low heat, stirring continuously with a whisk or wooden spoon until the sugar has completely dissolved. This typically takes about 5-7 minutes. Once dissolved, increase the heat slightly and allow the mixture to simmer gently for exactly 1 minute. Be careful not to let it boil vigorously, just a gentle simmer.

Immediately remove the saucepan from the heat. Stir in the freshly squeezed key lime juice and, if you’re using it, the key lime zest. The acidity from the lime juice will begin the thickening process. Continue to stir gently for about 30 seconds to ensure everything is well combined.
